The Reality of Cask Selection
The tasting table is rarely elegant.
It is usually covered with partially filled Glencairn glasses, open sample vials, handwritten notes, spreadsheets, distillery specifications, maturation records, ABV calculations, and endless comparisons between samples.
Hours become days.
Days become weeks.
Every spirit must be analyzed through multiple lenses:
- aroma complexity,
- mouthfeel,

- ester profile,
- tropical vs continental ageing influence,
- fermentation character,
- cask activity,

For whisky, we may compare:

Meanwhile, cognac and armagnac require a completely different lens — elegance, rancio development, oak restraint, fruit evolution, oxidation balance, and age integration become critical.
